  • Chicken fillet- 200 grams
  • Pickled cucumbers- 2-3 pieces

  • Hard cheese- 100g

  • How to prepare Lesnaya Polyana salad

    1 . First you need to prepare a container for the salad. Since we will be collecting it upside down and then turning it over, we need a container with straight sides or flaring towards the top. Or you can do it like we did, just take a sieve and line the bottom and edges with cling film. Boil chicken, carrots, eggs and potatoes.

    . Place champignons on the bottom, caps down; you can replace them with pickled honey mushrooms or other mushrooms.

    3 . Next, lay out the greens so that in the finished salad the mushrooms end up in a green forest clearing.

    4 . Shred the boiled chicken and place the next layer. Salt and pepper (a pinch).

    . Next you need to generously lay out a layer of mayonnaise. It will be tasty and healthy, in fact it is very simple and quick, be sure to try it.

    6 . Chop the boiled carrots on a coarse grater and add a bright layer of Lesnaya Polyana salad.

You can also cook carrots at the same time. It needs to be cooled under running cold water, then peeled and cut into small cubes. It is best to cut cucumbers, both fresh and pickled, into thin slices. Simply finely chop the boiled eggs with a regular knife.

    Place the chopped ingredients in a large salad bowl, season with spices and sauce, then mix thoroughly. Place the finished salad on a flat dish and level the top so that it becomes flat. This is most conveniently done using a special ring for forming salads, but you can get by with a regular spoon. Place the champignons on top of the appetizer, covering the entire surface with them.     Unlike the previous salad, this version does not use champignons, but real forest mushrooms - honey mushrooms. The original recipe uses pickled mushrooms, but you can also use salted ones. The dish will not lose at all from this. And one more nuance. This version of Lesnaya Polyana “loves” a large amount of mayonnaise. This is worth keeping in mind for people watching their figure. For this version of the Forest Glade you need to prepare the following products:

    • beef or veal – 300 g;
    • pickled honey mushrooms – 200-250 g;
    • potatoes - 3-4 medium-sized root vegetables;
    • cucumbers (fresh and pickled) – 150 g of each type;
    • cheese – approximately 150 g;
    • eggs – 3 pcs.;
    • mayonnaise - for dressing;
    • parsley, black pepper, salt - to taste.

    Boil potatoes in their skins. Boil the meat in water with the addition of salt, allspice and bay leaves. Peel the cooled potatoes and grate them on a shredder. Cut the meat and both types of cucumbers into thin slices. Boil the eggs and finely chop.

    Place potatoes on a flat-bottomed plate, add salt and pepper. Place a layer of pickled cucumbers on top. Place slices of meat on them, which also need to be salted, seasoned with pepper and greased with mayonnaise. Next, lay out boiled eggs, slices of fresh cucumbers and finely grated cheese. Grease the top and sides of the salad with mayonnaise. Place pickled mushrooms in random order on the very top and garnish with herbs.

    The taste of this salad is made by two products: Korean carrots and smoked chicken. In principle, any part of the bird is suitable for this version of Lesnaya Polyana, but the best option would be smoked breast. Well, in general, to prepare such a snack you need to take:

    • smoked chicken breast – 300 g;
    • Korean carrots – 150 g;
    • fresh cucumbers – 100 g;
    • eggs – 3 pcs.;
    • mayonnaise - for dressing;
    • onion, dill and parsley, black pepper, salt - to taste.

    Boil eggs and potatoes, cool, peel and finely chop. If desired, you can grate the potatoes on a coarse grater. Chop the greens (dill, parsley and onion) as finely as possible, add salt, add mayonnaise and mix. Peel the cucumber and cut into cubes. Cut the chicken meat into small cubes.

    Line a small saucepan with straight sides with cling film and you can begin laying out layers of Forest Glade. Just a piece of advice, to make the salad look more impressive, the layers should be laid out as densely as possible, and the sequence of laying out is as follows:

    • whole mushrooms with caps down;
    • mixed greens;
    • Korean carrot;
    • chicken meat;
    • a little mayonnaise;

    • ham – 200 g;
    • marinated champignons – 400 g;
    • carrots – 1 root vegetable;
    • pickled or pickled cucumbers – 2 pcs.;
    • potatoes - 2 medium-sized root vegetables;
    • eggs – 3 pcs.;
    • canned green peas – 200 g;
    • cheese – 150 g;
    • walnuts – 50 g;

    Boil vegetables (carrots and potatoes) in their skins, peel and grate on a coarse grater. Cut hard-boiled eggs and all other products, with the exception of mushrooms, into small cubes. Drain the liquid from the jar of peas, place the product in a bowl and mix with chopped green onions.

    To assemble the salad, it is advisable to use a special molding ring. But if it is not there, then you can carefully form layers with a spoon. Place potatoes as the bottom layer and generously coat with mayonnaise. Then a mixture of green peas and onions is laid out, and on them a layer of pickled cucumbers, which are also smeared with mayonnaise. The next layers are carrots and ham. The meat ingredient should also be coated with sauce and sprinkled with walnuts ground in a coffee grinder. Now you need to put a layer of eggs and sprinkle them with grated cheese. Pour mayonnaise over the top and level. All that remains is to sprinkle the entire surface with chopped dill, and place the mushrooms on it, caps up.

    The finished dish should be allowed to brew for an hour and a half, after which you can remove the molding ring and bring the dish to the table.

    Lesnaya Polyana salad, recipe with chicken and cheese

    A simply chic version of the Lesnaya Polyana salad can be prepared with baked chicken breast. Despite the fact that it consists of almost the same ingredients as the previous version, the taste is completely different. And to prepare this type of snack at home you need to have:

    • chicken fillet – 250 g;
    • pickled mushrooms – 200 g (both champignons and wild mushrooms are suitable);
    • carrots – 1 root vegetable;
    • fresh cucumbers – 1 pc.;
    • potatoes - 3 medium-sized root vegetables;
    • eggs – 3 pcs.;
    • cheese – 100 g;
    • onion – 1 small head;
    • mayonnaise - for dressing;
    • onion, parsley and dill, black pepper, salt - to taste.

    Rub chicken breast (skinless) with salt and spices and bake in the oven. Cool the finished meat and separate it into fibers. Grate the carrots using a Korean carrot grater or cut into thin slices and fry with onion cut into half rings until fully cooked (the carrots should become soft). Boil potatoes in their skins, as well as eggs and cool. Grate the cucumber on a Korean carrot grater or cut into thin strips.

    When all the products are properly prepared, you need to take a large dome-shaped salad bowl, cover it with cling film and lightly grease it with oil. After this, you can begin assembly. The salad should be laid out in the following order:

    • mushrooms (if these are champignons, then they should be placed with their caps down);
    • chopped greens;
    • baked chicken, which needs to be thoroughly coated with mayonnaise;
    • cheese grated on a shredder, smeared with a small amount of sauce;
    • eggs, also coated with mayonnaise;
    • cucumbers (this layer should be lightly salted);
    • fried carrots with onions (cover with mayonnaise mesh on top);
    • shredded potatoes.

    Firm the salad a little with a spoon, lightly coat with sauce and smooth out. Wrap the resulting dish with the free ends of cling film and place in the refrigerator for several hours.     It will contain chicken meat; it is best to take fillet for this appetizer. Honey mushrooms, especially in winter, are difficult to find, so in our case we use canned ones. You will need about 350 grams of them. Next you need to prepare two medium potatoes, two small fresh cucumbers, five chicken eggs, mayonnaise and herbs for decoration.

    First of all, the chicken meat is boiled. Boiled potatoes and eggs also go into the salad; the latter must be hard-boiled.

    And then everything is simple. The salad is placed on a plate in layers. The first layer is finely chopped chicken meat, which is soaked in mayonnaise. Then follow the chopped mushrooms. In our case, canned honey mushrooms. The third layer consists of boiled potatoes grated on a coarse grater, also covered with a layer of mayonnaise. The next layer after the potatoes is fresh cucumbers. They can either be finely chopped or grated (whichever is more convenient for you). This is followed by the last layer, consisting of finely grated eggs, which are also soaked in mayonnaise. The amount of mayonnaise should not be excessive, otherwise the salad will float, and this can ruin the beauty of the dish.

    It is proposed to decorate the salad with mushroom caps and green leaves on top to justify the romantic name of the prepared masterpiece.

    Korean carrots and honey mushrooms

    • pickled honey mushrooms - 400 grams will be enough;

    It is best to cut the chicken into small cubes against the grain, place the resulting pieces on a layer of potatoes and soak in a mixture of sour cream and mayonnaise. Regular boiled breast can be replaced with lightly smoked chicken, then the salad will get a more pleasant taste and aroma. The next two layers consist of: one of grated hard-boiled eggs, and the second of grated cheese. The top is again covered with mayonnaise mixed with sour cream. Those who don’t like to bother with slicing can simply grate the carrots on a coarse grater. Carrots, as planned, should be associated with the foliage of the autumn forest. Mushrooms cut from potatoes are placed on a carrot field. Each person's hat is coated with mayonnaise. A mixture consisting of grated cheese and mayonnaise is placed between the mushrooms on the carrot layer. All this goes into the oven. This concludes the preparation.     Preparation:

    1. Place the pickled mushrooms in a colander to get rid of excess liquid.
    2. Wash the cucumbers, cut off the tails and cut into strips. You can use a Korean carrot grater.
    3. Cut the cheese into short strips.
    4. We clean and chop the onion.
    5. Wash the tomatoes and cut them in half.
    6. Wash the dill, dry it with a paper towel and divide it into small branches.
    7. In a deep container, mix honey mushrooms, Korean carrots, cucumbers, onions, and cheese. Season the salad with mayonnaise, salt and pepper to taste.
    8. Decorate the finished dish with halved tomatoes and dill.
    9. Before serving, place the salad in the refrigerator for at least 30 minutes.

    • rice (150 g);
    • chicken egg (5 pcs.);
    • garlic (2-4 cloves);
    • parsley/dill/basil/rosemary/mint (for decoration, 3-4 sprigs);
    • mayonnaise (150 g);
    • vegetable oil (for frying, 60 ml);
    • ground black pepper (to taste);
    • salt (to taste).

    Preparation:

    1. Wash the mushrooms, cut them into pieces and fry in vegetable oil until the liquid has completely evaporated. Before finishing cooking, salt and pepper the mushrooms.
    2. Wash the rice and boil in salted water for 20 minutes over low heat.
    3. Boil the eggs hard (10-15 minutes after the water boils).
    4. Cut the ham into small cubes.
    5. We peel the eggs and pass them through a vegetable cutter.
    6. Peel the garlic and squeeze it through a press.
    7. Wash the parsley, dry it and separate the leaves.
    8. Make the dressing - mix mayonnaise with garlic.
    9. We form the salad in layers, greasing them with mayonnaise-garlic sauce.

    Preparation:

    The dish is made in layers, spreading mayonnaise on each layer. First, peel the boiled potatoes

    The first layer is potatoes, grated on a coarse grater, with mayonnaise on top. After the potatoes, we apply mayonnaise without sparing, because the potatoes are dry and should be well soaked in mayonnaise

    The second layer is grated eggs on a coarse grater (here you can skip the mayonnaise). Eggs can, of course, be finely chopped, but using a grater makes it more airy

    The third is made from finely grated cheese. When laying it out, we try to keep it a little airy. Lubricate with sauce

    Fourth - grind the chicken fillet (can be smoked, fried, boiled, to your taste), you can cut it, you can split it with your hands and spread it with mayonnaise

    Fifth layer - chop the pickles (squeeze out the juice so that the salad is not wet), do not grease with sauce here

    Sixth - peel the boiled carrots and grate them on a coarse grater. Place in an even layer, brush with sauce

    The seventh is green onions, which we sprinkle on the carrots.

    Ingredients:

    • Marinated champignons - 300 gr.
    • Boiled potatoes - 2 pcs.
    • Bunch of green onions or parsley

    • Boiled eggs - 2 pcs.
    • Chicken fillet - 350 gr.
    • Mayonnaise
    • Sunflower oil

    Cooking:

    To prepare the salad, you need to take a deep bowl or plate. Take sunflower oil and grease the edges of our bowl and the bottom. Then we carefully fold our mushrooms beautifully with their caps down.

    Now we finely chop the greens (onion, dill or parsley) in our case, these are green onions. Sprinkle our champignons with herbs

    • Ham – 300 gr
    • Jar of canned champignons - 400 g
    • Processed cheese (Druzhba type)
    • Boiled eggs - 4 pcs
    • Sweet and sour apple – 1 pc.
    • Onion - 1 piece
    • Boiled carrots - 1 pc.
    • Mayonnaise with garlic (2-3 cloves of garlic)

    Preparation:

    It can be prepared both for the holiday table and for treating loved ones. It is very easy to make from ordinary products. It flies away in an instant, guests usually ask for the recipe.

    Ingredients:

    • Boiled chicken 200 gr
    • Hard cheese 200 gr
    • Cucumbers (salted or pickled) 250 gr
    • Whole marinated champignons 250 gr
    • Mayonnaise, salt, pepper to taste
    • Dill bunch
    • Boiled potatoes 3 pcs
    • Boiled carrots 2 pcs
    • Boiled eggs 3 pcs

    When cooking, we need cling film.

    To make the salad, it is better to take a deep bowl. Cover the bowl with cling film, grease the bottom and edges of the dish with sunflower oil

    Open the jar of mushrooms and drain all the liquid from it. The first layer is champignons, place them caps down.

    The next layer is cheese. Grate it on a coarse grater, grease with mayonnaise

    Now the cucumbers that need to be opened and the brine drained. We rub them through a grater, spread them in an even layer, smearing them with mayonnaise.

    And finally, the last thing is potatoes. Grate, tamp, close with a salad bowl and turn our salad from bottom to top

    To assemble and prepare this salad, we usually take a deep bowl, but you can also use a cake pan.

    We place this form on a flat salad bowl and begin to lay out layers that consist of the following products:

    • Boiled potatoes 3 pcs
    • Champignons, marinated 300 gr
    • Boiled chicken fillet 250 gr
    • Korean carrots 200 gr
    • Cheese 150 gr
    • Mayonnaise
    • Dill, parsley, green onion

    Place marinated champignons on the bottom of the salad bowl, caps down, so the champignons should be whole

    The next layer is boiled potatoes through a coarse grater. Carefully lay out and distribute evenly over the surface. Lubricate with mayonnaise
