Dessert is a delicious and welcome part of any holiday event or family dinner. In every grocery store you can find a huge selection of pastries, cakes and other goodies, but not a single store-bought product can compare with fragrant homemade baked goods. Therefore, if you want to pamper your loved ones with a delicious dessert, then bake something, for example, a Tyrolean pie.

It is worth saying that Tyrolean pies have a very simple composition.

The dessert consists of several layers of sponge or shortbread dough, with a layer of custard. But the main “highlight” of the cake is the top: fresh or baked berries, fruits or cottage cheese.

There are cooking options where cinnamon, nuts, and cloves are added to the dough, and the top layer is not berries or fruits, but a beautiful jelly. In general, there are many cooking options. Let's look at some.

Tyrolean berry pie

To prepare Tyrolean pie you will need:

  • Any berries (currants, strawberries, raspberries are recommended) – 0.5 kg;
  • Chicken eggs – 7 pcs. (for preparing the dough - 2 pcs. and 5 yolks - for the cream);
  • Granulated sugar and flour, half a glass each;
  • Vanilla sugar and baking powder ½ tsp each;
  • Butter – 30 g;
  • Powdered sugar – 125 g;
  • Milk – 0.5 l;
  • Starch – 1 tbsp. l.;
  • Berry jelly (buy with the flavor of the berries you will use) – 2 packages;
  • A pinch of salt.

If all the ingredients are available, then you can start preparing the dessert. First of all, let's deal with the berries. If you have them fresh, then simply wash them, dry them and remove inedible parts (twigs, stalks, etc.). If you have freshly frozen berries, then leave them to defrost at room temperature.

Now let's do the dough. Break 2 chicken eggs into a deep bowl, add vanilla sugar, turn on the mixer at maximum speed and beat everything into a homogeneous mass. Then gradually add flour, salt and baking powder into the bowl. Beat everything thoroughly again with a mixer.

Place a piece of butter in the crust and melt. Take 1 tbsp. l. prepared dough, mix thoroughly with butter, and then gradually pour into the bowl with the rest of the dough. Stir the resulting mixture again.

Place the dough in a pre-buttered pan and bake in the oven at 180 degrees for 10 minutes. Then carefully remove the cake from the pan and let it cool.

In a deep plate, beat 5 chicken yolks and powdered sugar to a white dense foam. Fry 1 tablespoon of flour in a preheated frying pan. It should acquire a delicate creamy shade. When this happens, add it along with the starch to the beaten yolks. Mix everything until smooth.

Heat the milk in a saucepan. When it becomes warm, add half a cup of cream to it. While doing this, stir the milk constantly. As soon as it boils, stirring constantly, add the remaining cream. Now cook it over low heat until thickened. It is very important that the cream does not boil or burn; stir it constantly. When you see that the consistency has become thick enough, remove the pan from the heat and allow the cream to cool.

Dilute the berry jelly with water according to the instructions on the package. A little tip: if you use frozen berries for cooking, you can dilute the jelly with their juice. It will turn out very tasty.

Transfer the baked pie crust, which has already cooled, into the pan. If it is larger than the future cake, then make improvised sides out of paper; this will prevent the cream and jelly from spreading. Now pierce the cake with a knife. It is recommended to make “holes” more often so that the biscuit is better soaked.

After this, fill the top of the cake with cream, put the culinary masterpiece in the refrigerator for half an hour. After 30 minutes, take it out, spread the berries over the cream, and pour the jelly over everything. Try to keep it distributed evenly. Place your dessert in the refrigerator for 12 hours. As time passes, you can eat the cake.

By the way, some housewives not only spread the cream on top of the cake, but also cut the cake base into 2 parts and coat each separately. But this is a matter of taste!

Now you know the recipe for a delicious Tyrolean berry pie. It turns out very tender. And by the way, you can always change the taste of the dessert by adding unusual fruits and berries.

Tyrolean cherry pie

Using the recipe described above, you can make a pie with any berries, but nevertheless, there is a separate option for baking a delicious delicacy with cherries.

So, the composition of the Tyrolean cherry pie will include the following ingredients:

Products for the test:

  • Flour – 300 g;
  • Granulated sugar – 5 tbsp. l.;
  • Butter – 150 g;
  • Chicken egg – 1 pc.

For cream:

  • Milk – 1 glass;
  • Chicken eggs – 3 pcs.;
  • Granulated sugar – 4 tbsp. l.;
  • Starch – 1 tsp.

For filling:

  • Cherries – 2 cups;
  • Granulated sugar – 3 tbsp. l.;
  • Vodka – 30 ml;
  • Gelatin – 1 tbsp. l.

First of all, you need to take care of the filling. If you have fresh cherries, rinse them and remove the pits. If the cherry is frozen, then it must thaw (the further procedure will not depend on the freshness of the berries).

Place the berries in a deep plate, add sugar and pour in alcohol. Let the filling sit while you bake the crust and prepare the cream. Let's start with the cakes. To do this, cut the butter into cubes and mix in a deep bowl with the egg and sugar. Add flour and mix the dough with your hands until it becomes soft and elastic. Place it in the refrigerator for half an hour.

After 30 minutes, take it out, roll it out and place it in the mold. Pierce the future cake layer in several places with a fork and place it in the oven. Bake for 15 minutes at 220 degrees. It’s better to focus not on time, but on the color of the dough; it should turn golden. When this happens, remove the cake and let it cool.

It's time to prepare the cream. To do this, pour sugar and starch into the pan, beat in the eggs. Mix everything with a mixer, pour in the milk and mix again. Place the mixture on low heat. Bubbles should appear on the surface of the mixture, but the cream should not boil. Otherwise it will turn out too viscous.

When the cream is ready, start forming the Tyrolean cherry pie. Spread the cream evenly on the cooled cake and place the dessert in the refrigerator for 30 minutes.

Dilute gelatin according to the instructions on the package. Pour into the “drunk” cherries. Remove the cake from the refrigerator and distribute the berries evenly over it. Pour gelatin mixed with cherry juice on top of the dessert. Place the cake in the refrigerator for 3-4 hours until the berry jelly has completely hardened. Now you know the recipe for Tyrolean cherry pie. Let's move on!
